This recipe is the ultimate dump and go crockpot recipe for when you’re in a hurry and want to eat something simple.
I was scrambling for dinner one day when we were running low on groceries and I didn’t feel like going to the store. I found chicken breast in our freezer to thaw, two potatoes and a can of green beans, and I was ready to prep my meal! This meal is pretty self explanatory, but it was delicious and so I wanted to share it with y’all on the blog. 😊
To assemble, throw everything into your slow cooker, cover and cook on low for about 6-7 hours, or until you get home from work. I have one crockpot that allows me to set the cooking time and then it reverts to the “keep warm” setting, and another crockpot that stays on the setting you’ve selected until you manually change it. Whichever kind of slow cooker you have will work and this will be a tasty meal to enjoy when you get home. It’s always nice to not have to worry about cooking after a long day of work. With that being said, I paired my dinner with some Pillsbury rolls and a glass of wine, but this is obviously optional and up to personal preference.
INGREDIENTS
1 can green beans
2 chicken breasts (you can use however many you like and whatever kind of chicken you prefer)
2 yellow potatoes (russet or any other color potato will work fine)
1 small red onion
1 tsp minced garlic
1 packet of ranch seasoning
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp parsley flakes
1 tsp crushed red pepper
1/3 cup vegetable broth (or just enough to cover the chicken at the bottom of the crockpot)
DIRECTIONS
1. Place chicken breast in the crock pot and cover with enough vegetable broth (you can also use chicken broth if that’s what you have on hand) to cover the bottom of the crockpot
2. Cover chicken with diced onions and minced garlic
3. On one side of the chicken, put your potatoes and on the other side the green beans
4. Sprinkle the ranch seasoning packet over the top of the chicken, green beans and potatoes, along with the salt, pepper, garlic powder, onion powder, parsley flakes and crushed red pepper
5. Give the ingredients a little mix in the crockpot until combined, cover, and cook on low for 6-7 hours. OR cook on high for 3 hours
6. Serve with side of Pillsbury biscuits and a glass of wine 😉 (OPTIONAL)
