Chocolate Chip Peanut Butter Cookies Recipe

Delicious chocolate chip cookies with peanut butter cups are perfect to enjoy any time of day or year. 

Last night, I felt like baking some cookies, so I decided to follow a recipe that I modified from my Magnolia Table cookbook.


The recipe I followed for the cookies if for the Silo Cookies, but I omitted the chopped nuts and I substituted the peanut butter morsels for some peanut butter cups taken from a chocolate trail mix we had in our pantry. The recipe is used is cut in half, so if you want to make more cookies, just double the recipe!


Cookies are so easy and fun to make - perfect for baking with children or just because you have a craving for something sweet at night!




Chocolate Chip Peanut Butter Cookies Recipe


Ingredients

Filling:

1/2 cup (1 stick of butter)

1/2 cup packed light brown sugar

1/3 cup granulated sugar

1 large egg

1 tsp vanilla extract

½ tsp salt

1 cup all purpose flour

1 1/4 cup rolled oats

½ tsp baking soda

1 cup chocolate chips

1/2 cup of peanut butter cups


Directions


  1. Pre-heat your oven to 350 degrees

  2. In a stand mixer, cream the sugars and butter on a low/medium speed until light and fluffy, about 2 minutes

  3. Add the egg and mix until combined (about 10-15 seconds)

  4. In a medium size bowl, mix together the flour, baking soda and salt

  5. Slowly add the flour to the wet ingredients and mix until we'll incorporated

  6. Once mixed, add the rolled oats, chocolate chips and peanut butter cups. Mix until combined (about 20 seconds)

  7. Place cookie dough in the fridge for at least 30 minutes to chill

  8. Line a baking sheet with parchment paper or aluminum foil and drop cookies onto the sheet, about 2 inches apart. I used a 1 1/2 inch cookie scoop, but whatever you have on hand will work!

  9. Bake the cookies for about 13 minutes, or until golden brown

  10. Let cookies cool for 5-10 minutes and enjoy!! 😊
